Crispy, golden mashed potato puffs with a soft and cheesy center.
🛒 Ingredients
- 2 cups freshly prepared or leftover mashed potatoes
- 1 cup shredded cheddar cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs
- ¼ cup milk
- 2 green onions, chopped
- Salt, to taste
- Black pepper, to taste
- ½ tsp garlic powder
- ½ tsp smoked paprika, optional
👩🍳 Instructions
Preheat your oven to 400°F (200°C). Lightly grease a muffin pan to prevent the potato puffs from sticking.
Add the mashed potatoes, shredded cheddar cheese, Parmesan cheese, eggs, milk, green onions, garlic powder, smoked paprika, salt, and black pepper to a large mixing bowl.
Mix everything thoroughly until the mixture is creamy and evenly combined.
Spoon the potato mixture evenly into the prepared muffin cups, filling each one approximately ¾ full.
Bake for 20–25 minutes, or until the tops are golden brown and the edges become slightly crispy.
Allow the potato puffs to cool in the muffin pan for a few minutes before carefully removing them.
Serve warm and enjoy the crispy edges and fluffy, cheesy centers.
For crispier edges, lightly grease the muffin pan before adding the potato mixture. Let the puffs rest for a few minutes after baking so they release from the pan more easily.
