🛒 Ingredients
For the Chocolate Filling
- 1 prepared graham cracker crust
- 1¾ cups cold milk
- 1 package (3.9 oz) instant chocolate pudding mix
- 4 oz cream cheese, softened
- 1 cup whipped topping
For the Coconut-Pecan Topping
- 1 cup sweetened shredded coconut
- ½ cup chopped pecans
- ½ cup evaporated milk
- ⅓ cup brown sugar
- 2 tbsp butter
- 1 egg yolk
- ½ tsp vanilla extract
- Extra pecans for garnish
👩🍳 Instructions
In a large bowl, whisk the cold milk and chocolate pudding mix for about 2 minutes until thickened.
Beat the softened cream cheese until smooth, then mix it into the chocolate pudding.
Gently fold in the whipped topping until creamy and completely combined.
Spread the chocolate filling evenly into the prepared graham cracker crust.
Combine the evaporated milk, brown sugar, butter, and egg yolk in a saucepan. Cook over medium-low heat, stirring constantly, until the mixture thickens.
Remove from the heat and stir in the vanilla, shredded coconut, and chopped pecans. Let the mixture cool completely.
Spread the cooled coconut-pecan topping evenly over the chocolate filling.
Garnish with extra pecans and refrigerate for at least 4 hours, or until completely set.
Slice the pie and serve chilled.
For the cleanest slices, refrigerate the pie overnight and use a sharp knife wiped clean between each cut.
