🛒 Ingredients
For the Graham Cracker Crust
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the Raspberry Swirl
- 1½ cups fresh or frozen raspberries
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon water
For the Cheesecake Filling
- 16 oz (450 g) cream cheese, softened
- ¾ cup (150 g) granulated sugar
- 2 large eggs
- ½ cup (120 g) sour cream
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- Pinch of salt

Add the raspberries, sugar, and lemon juice to a small saucepan. Cook over medium-low heat for about 5–7 minutes, stirring and gently crushing the berries.
Mix the cornstarch with 1 tablespoon of water, then stir it into the raspberry mixture. Cook for another 1–2 minutes until slightly thickened.
Remove from the heat and allow to cool.
For a completely smooth swirl, press the sauce through a fine-mesh strainer to remove the seeds.
Preheat the oven to 325°F (165°C).
Combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs resemble wet sand.
Press firmly into the bottom of an 8×8-inch baking pan lined with parchment paper.
Bake for 8–10 minutes, then remove from the oven and let cool slightly.
Beat the softened cream cheese and sugar until smooth and creamy.
Add the eggs one at a time, mixing on low speed just until combined.
Add the sour cream, vanilla, lemon juice, and salt. Mix gently until smooth.
Avoid overmixing once the eggs have been added.
Pour the cheesecake filling over the prepared crust and smooth the top.
Drop small spoonfuls of raspberry sauce over the cheesecake.
Use a toothpick or thin knife to gently swirl the raspberry sauce through the filling.
Don’t mix too much—you want visible red and white swirls throughout the cheesecake.
Bake at 325°F (165°C) for 35–45 minutes, until the edges are set but the center still has a slight jiggle.
Turn off the oven, crack the door open, and allow the cheesecake to rest inside for about 20 minutes.
Let the cheesecake cool completely at room temperature.
Cover and refrigerate for at least 4 hours, preferably overnight. This step is important for achieving a thick, creamy texture.
Once chilled, cut into squares and serve.
